This recipe makes a big batch of pancake mix, like you would buy in the grocery store. I keep it in the freezer and use it a cup at a time. It is a lifesaver in the morning before school!
*I use a large freezer bag to store the pancake mix.
*Make sure you mix the ingredients in the bag thoroughly so that you evenly distribute the baking soda and powder. (If you don’t have whole wheat pastry flour you can use all-purpose flour.)
*For the pancake batter I whisk together one cup of mix, 3/4 cup skim milk (or buttermilk), one egg, and 1 T ground flax seed (optional). Let it rest for a couple of minutes so that the baking powder has a chance to react and make fluffy pancakes.
*1/3 cup of batter for each pancake is perfect for my frying pan…because I am also too tired to get out my electric griddle. While they are baking on the first side I drop a few blueberries (or mini chocolate chips, sliced bananas, strawberries) on top.
*Flip them when they start to look done around the edges.
*I use this recipe all week long during the school year. Add a glass of sugar-free Carnation instant breakfast with your blueberry pancakes and you have a healthy breakfast that keeps the kids full until lunch!

Great recipe. No more store bought mix for me – the kids LOVE these. Thanks for sharing!

These were delicious. I made them for dinner tonight and they were a hit with everyone. I used buttermilk which added a nice flavor and made for a moist pancake. I also added blueberries. What I really liked (besides the flavor) was how light and fluffy they are compared to other whole wheat pancake recipes I’ve tried which have always been thin. This is a winner and I’ll make it time and time again.

I prepared this mix yesterday because I ran out of the one I usually buy. I added 1cup+ 1/8cup of buttermilk powder to make a buttermilk mix. Instead of the 3/4 cups of milk I use water (because I already used the buttermilk powder in the mix).
I liked how light and fluffy they were. I kind of felt the a light flavor of baking soda so I wonder if it should call for less. But overall, all at my house liked it and didn’t fuss at all!
With a little of cinnamon and vanilla it makes the perfect pancake for me!

Made these this morning and they were fabulous! Light and fluffy and super fast. Even my husband commented on how fast they were made. Glad that I have extra mix in the pantry to make for another morning.
