Gluten Free Hearty Banana Pancakes take 10 minutes to make. They are healthy and delicious especially topped with your favorite yogurt!
First, mash the banana (the riper it is, the sweeter the pancakes will be).
Add the eggs and vanilla to the banana mixing them together. Add the coconut flour and the flaxseeds. You can use flaxseed meal as well if you want smoother pancakes. I like the seeds because they add a little texture. Finally, mix in the cinnamon and the baking powder. Mix the batter up until you are not able to see the bubbles of coconut flour anymore.
Heat a larger saucepan up and grease it. Once pan is greased, pour the batter into the saucepan on medium heat. I make one huge pancake but you can make probably 5-6 smaller pancakes from the recipe.
