Inspired by Kerbey Lane in Austin . . . But it’s been so long since I’ve eaten there, I can’t verify the authenticity.
Cream together eggs and sugar. Mix the other wet ingredients together in a large bowl. Combine dry ingredients and spices in a separate bowl. Add dry ingredients to wet, mixing gently. When combined, mix in:
1 stick of butter, melted
This makes about 8 thick, plate sized pancakes. They are very thick. Cut back a teaspoon of baking soda or so if you prefer less cakey pancakes.
* If you don’t have any handy, buttermilk is easy to make: 1 cup milk + 1 Tablespoon of lemon juice or vinegar. I let it stand for a half hour or so, but you could probably push it to even 5 or 10 minutes in a pinch. *

WOW!! These sound gooooood. Perfect for Christmas time
I am wondering if the coffee is a necessary ingredient and if it is, can it be warm or should it be room temp or colder?
