These easy fluffy pancakes are delicious and only take a few ingredients to make! Awesome make-ahead breakfast. Make on the weekend and just pop the extras in the freezer. Just toast and go! Busy people, rejoice!
In a large bowl, whisk flour, sugar, baking powder, and salt.
In another bowl, whisk eggs, milk, vanilla, and oil until blended. Pour milk mixture into flour mixture and whisk gently to incorporate. Don’t over-mix.
Cook pancakes over medium-low heat until golden brown on both sides. Serve with your favourite toppings. Enjoy!
