Description

This healthy breakfast can either precede or follow your Thanksgiving feast.

Ingredients

  • ¾ cups White Whole Wheat Flour (regular White Is Ok, Too)
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 Tablespoon Ground Flaxseed (optional)
  • 1 whole Egg
  • ¾ cups Milk
  • 1 Tablespoon Butter, Melted
  • ¾ cups Your Favorite Uncooked Cranberry Orange Relish
  • 2 Tablespoons Chopped Walnuts

Preparation

Mix dry ingredients. Mix egg, milk, and butter, then pour into the flour mixture. Add relish and nuts. Mix just enough to combine all ingredients. Cook on a griddle.

Makes about 10 pancakes. Recipe is easily doubled or tripled. Leftovers can be frozen if your kids don’t like the pancakes any more than they did the plain relish.

Eat plain or serve with orange syrup or marmalade.
