Easy-peasy pancakes with cherry preserves plopped in the middle. Yum!
* Of course, you could make this with your favorite homemade pancake batter. I just didn’t have any eggs on hand this morning!
* Also, I followed the recipe on my pancake mix, but substituted buttermilk for the water. Plus I added vanilla extract, because Pioneer Woman told me to.
So! Make the pancake batter as directed, substituting buttermilk for water if you have it on hand. Add the vanilla extract to the batter.
Drop 1/4 cup blobs of batter onto a greased heated skillet and immediately plop a tablespoon or so of preserves on top, spreading it around a little. Cover the preserves with a little more batter and allow the pancakes to cook until the edges are dry and the bottom is golden brown. Flip and allow to cook until the middle is dry and the other side is golden!
Top with whipped cream, if desired (and it’s desirable!).
