These yummy blueberry protein pancakes are our favourite healthy breakfast and pre-workout meal.
Combine oats, egg whites, cottage cheese, and maca powder (if using) in a food processor or blender.
Heat some coconut oil in a skillet. Pour the mixture to make medium-size pancakes. Add the blueberries and cook 2–3 minutes on each side over medium heat.
Once cooked, arrange pancakes on a plate and serve with maple syrup or peanut butter spread.
