Description

Thick French standard of a berry-filled custard-like oven pancake served in wedges.

Ingredients

  • 1 cup Milk
  • ½ cups Heavy Cream
  • ⅓ cups Sugar
  • ⅔ cups Flour
  • 2 whole Eggs
  • 1 whole Egg Yolk
  • 1-½ teaspoon Vanilla Extract
  • 3 cups Blueberries, Fresh Or Frozen
  • 2 Tablespoons Confectioners Sugar, For Dusting

Preparation

Preheat the oven to 375 F. In a blender or food processor, combine the milk, heavy cream, sugar, flour, eggs, egg yolk and vanilla and blend until smooth. Arrange the berries in a buttered 10-inch pie plate and pour the batter over them. Bake for 35 to 45 minutes, or until the flan is puffed and golden. Sift confectioners’ sugar over the top and serve warm. Serves 4 to 6.

This was really easy and very good. I know clafoutis’ are not too sweet and this one is not. If your berries are not very sweet, as mine were not, you may want to increase the sugar by a couple of tablespoons. Otherwise, a great spin on this old french standard :) TX
