Moist and delicious pancakes. Quick and easy and perfect topped with jam!
Combine dry ingredients in a bowl. Beat eggs and add them into a bowl with the sour cream and cottage cheese. Mix wet ingredients with dry just until combined.
Heat a non-stick griddle over medium to medium-high heat and add a pat or two of butter. Dollop batter onto the skillet in your preferred size pancakes, leaving space between them. Cook until both sides are golden and cooked through. Serve with jam.
