Description

For having literally 2 stinking ingredients in them—and ingredients that are healthy, unprocessed, no white sugar, no starch or flour, and no oil, you seriously can’t go wrong! Plus they’re so easy to make! I can see myself making these for babies and youngsters someday, because of the simple unprocessed ingredients used.

Ingredients

  • 2 whole Ripe Bananas, Peeled
  • 4 whole Large Eggs
  • Coconut Oil, Canola Oil Or Butter, For Greasing Skillet

Preparation

1. In a blender or food processor, puree your bananas until they become liquid with very slight chunks, about 10-15 seconds.

2. Slightly beat your eggs in a medium sized bowl and then add them into your bananas. Puree another 5-10 seconds to fully combine.

3. Preheat a non-stick pan or skillet over medium to medium-high heat and lightly grease with coconut oil, oil, or butter. We used coconut oil. Carefully spoon or pour batter into the pan, as mixture will spread out quite a bit. You can use a tablespoon or whatever size measuring cup yields your preferred size of pancake. Fit as many into the pan as you can without crowding.

4. Allow to cook a few minutes on the first side (you’ll see little bubbles appear on the top surface when it’s ready to flip) and then flip and cook another minute or two on the other side. Remove from pan and repeat cooking the rest of the batter.

Serve immediately alongside butter or coconut oil, and warm maple syrup or honey! Or if you’re really trying to be health conscious, use neither. They’re naturally slightly sweet anyway!

These weren’t bad. I definitely wouldn’t characterize them as the best pancakes I have ever had, but they were pretty good for the little amount of ingredients required! They tasted exactly like what they are made up of, Bananas and eggs. I added a little salt and some cinnamon to mine to flavor them up a bit. Overall hey are a good high protein, low sugar easy breakfast. You also can eat that TALL stack of pancakes we all want to eat without feeling the least bit guilty!

Holy moly, it works! Of course I had to try these, because who ever heard of pancakes made out of bananas and eggs? I just made a half batch and did one big pancake for my dinner, and I was really tickled by how well it turned out. Nicely sweet from the overripe banana, and the eggy flavor reminded me of french toast. I buzzed my batter up nice and airy with my stick blender and it was like a dense pancake, but not like the flat omelet I had expected. An unusual, delicious and very healthy meal! Thanks!

Well, they work as a syrup vehicle. They are very banana-y in flavour, taste more like a banana bread than a pancake. They also are gummy. I’ll stick to gluten free pancake mix when my GF friends come visit!
