Warm, fluffy pancakes made with bananas and coconut flour. A healthy and tasty alternative. Drizzle with pure maple syrup or fresh fruit.
Put bananas, eggs, coconut flour, cinnamon, and salt in a blender and blend until very smooth.
Heat a cast iron skillet or griddle to medium heat. Add coconut oil and pour batter into the pan. Cook until pancakes are slightly bubbly and edges are firm. Flip, and cook for another 2 minutes or so. Continue cooking until all pancakes are done.
Serve with the maple syrup and/or fruit.
