There are some really great flavors in this breakfast feast for two!
Wash and zest both oranges and set aside. Cut oranges in half—we will use them shortly for juicing.
In a mixing bowl add eggs and cinnamon and whisk together well. Add juice and zest (from one orange) and mix with a whisk.
In a large skillet or grill/griddle pan add a pat of butter and heat on medium high heat. Dip bread into the egg mixture and coat each side well, doing one slice at a time.
Add coated bread slices into the skillet in a single layer and cook for 3-4 minutes on each side or until golden in color to your liking (we like ours a bit on the well done side).
In a small microwave safe mixing bowl add ricotta cheese and juice from one orange. Stir to combine and place in the microwave. Cook for one minute to warm contents. Stir together and set aside.
To make the homemade syrup: In a microwave safe bowl add honey, brown sugar, orange extract, and the zest from the remaining orange and stir with a sturdy spatula. Microwave in 30 second intervals until warmed through and brown sugar is melted and combined.
To serve, place one cooked sliced of French toast on two plates. Add a nice size portion of orange ricotta cheese then add another slice of cooked French toast on top. Ladle or spoon homemade syrup over the French toast. Dust with confectioners’ sugar, if desired. Enjoy! It is absolutely scrumptious.
