A combination of lightly toasted and nutty whole-wheat bread, fresh spinach and a perfectly-cooked egg (runny yolk, of course). I love adding some tangy goat cheese. It totally completes it.
Toast bread using your preferred method. While bread is toasting, cook egg over medium heat in a small pan coated with cooking spray (you can cook it any way you like, but I like over-easy). Place spinach on the toasted bread and top with egg and crumbled goat cheese. Devour!
