A breakfast omelette filled with spinach and cheese.
1. Crack eggs into a bowl, add milk, salt and pepper and whisk together.
2. If you haven’t already, prep your veggies and cheese as detailed in above list and set aside on a plate.
3. Heat a small skillet on medium/high heat and melt the butter.
4. Once butter is bubbly, pour egg mixture into skillet. Cook for 3 minutes making sure edges don’t stick to the pan.
5. Add spinach, onion and cheese to one side of the egg mixture and cook another 2 minutes.
6. Use a straight wooden spoon to push the empty side of the egg over the topping side then slide omelette out of the skillet onto a plate.
7. Enjoy!
