Description

No bake, no dairy, no weird ingredients. Healthy, 9-ingredient, and salty-sweet energy bars with a perfectly crunchy texture. Perfect on-the-go breakfast, pre- or post-workout snack, or afternoon pick-me-up.

Ingredients

  • 1 cup Cashews, Chopped
  • 1-½ cup Crispy Brown Rice Cereal
  • ¾ cups Old Fashioned Rolled Oats
  • ⅔ cups Dates, Pitted And Chopped
  • ⅔ cups Unsweetened Shredded Coconut
  • ¾ cups Almond Butter
  • ¼ cups Honey
  • 3 Tablespoons Dairy-free Or Vegan Butter (I Like Earth Balance Vegan Buttery Sticks)
  • 1-½ ounce, weight Dairy-free Chocolate, Dark Or Bittersweet (I Like Enjoy Life Brand)

Preparation

Coat an 8-inch square baking pan with nonstick cooking spray (canola or coconut), line with parchment, then spray parchment; set aside.

In a medium mixing bowl, combine chopped cashews, cereal, oats, dates, and coconut.

In a small saucepan, stir together almond butter, honey, and dairy-free butter over medium heat until butters melt and mixture is smooth. Pour over the dry ingredients, stir to coat evenly, then press into prepared baking pan. Refrigerate for 2 hours.

Shortly before removing the pan from the fridge, melt dairy-free chocolate in a microwave-safe bowl in 15-second increments. Stir and repeat until melted and smooth. Once ready, drizzle the chocolate over the granola, then chill the granola in the freezer until the chocolate hardens, about 5 minutes.

Remove granola from pan and cut into 10 even bars. Store granola bars in a cool place in a covered container for up to 1 week. (I keep mine in the freezer, but it’s totally up to you!)
