Bircher Muesli is one of my all time favorite breakfast recipes. I discovered it when I lived in Switzerland and ate it most mornings. I’ve even eaten it at the home where it was invented in Zurich! It’s super healthy and full of oats, nuts, yoghurt and fruit! It really fills you up and keeps you going until lunchtime.
I’ve tried some variations, but a berry-packed, nut-stuffed bowl is my favourite way to have this dish.
1. In a mixing bowl, mix together the oats and cranberry juice. Then add the honey, lemon juice, yoghurt, nuts and raspberries.
2. Cover with cling film and leave in the fridge overnight.
3. Serve into your bowls in the morning and scatter some chopped nuts, strawberries, blueberries, raspberries, or any other fruit over the top!
