These Mini Sausage Quiches make a delicious, savory dish for your next breakfast or brunch!
Preheat oven to 375ºF. Lightly spray a 24-count mini muffin tin with nonstick cooking spray. Set aside.
In a large skillet, brown sausage over medium heat. Drain and then stir in chives and garlic powder. Set aside.
Unroll pizza crust onto a flat surface and lightly press to flatter. Cut dough into 24 squares. Place each square into muffin tin, pressing down and up the sides of pan. Fill each muffin cup with about 1 tablespoon of sausage mixture.
In a medium bowl, beat eggs and cheese. Spoon 2 teaspoons of egg mixture over the sausage mixture.
Top with additional chives, if desired.
Bake for 20–22 minutes, or until crust is golden brown and middle is cooked through. Remove from oven and let cool for 5 minutes in pan. Serve immediately.
