This dish is great as tacos or burritos, any time of day.
Heat a small skillet on medium-low heat with oil. Chop the tomato, dice the onion and jalapeno, add to the oil and cook for about 5 minutes.
While the veggies cook, whisk your eggs and add them to the skillet. Add salt and pepper to taste, let them set a little and scramble them as little as possible or to the consistency you desire. Heat the tortillas, make your tacos and enjoy.
You can sprinkle your tacos with queso fresco and salsa if you’d like.
