Preheat oven to 400 F. Lightly grease two 12-count muffin tins and set aside.
Whisk flour, salt, and baking powder in a large bowl. Add the remaining ingredients and beat for 1-2 minutes with an electric mixer.
Fill the muffin cups about 3/4 of the way full. Bake for 15-20 minutes. Enjoy them hot out of the oven with a cool glass of milk!
