Outstanding breakfast or bunch fare, especially on a weekend that you have company.
Preheat oven to 375ºF.
In a large bowl, add eggs, half-and-half, salt, and black pepper. Whisk well, set aside.
Using a large 12-inch cast iron skillet (or another large skillet) over medium heat, melt butter. Add onions and bell peppers and sauté several minutes. Add crumbled hot sausage, sage, cumin, and smoked paprika, stirring to break sausage up into pieces. Cook 8–10 minutes until sausage is fully cooked.
Add egg mixture and gently fold into sausage. Place skillet into the oven and bake 30 minutes or until golden brown.
Remove from oven, slice into triangles, and serve. We love this with a side of fresh fruit and corn bread muffins. Enjoy!
