Honey Coconut Granola is a sweet treat for breakfast.
Preheat oven to 350ºF.
In a large bowl, add the oats, almonds, coconut and salt. Mix together all ingredients.
In a small pot over low heat, add the honey, brown sugar and vanilla. Heat until all ingredients have melted together, stirring often, 3-5 minutes.
Add honey mixture to oat mixture and stir well to combine. Spread granola onto a nonstick sheet pan.
Bake 30 minutes or until light brown and crunchy. Every 10 minutes, turn and stir granola for better browning.
Remove from heat and let cool 15-30 minutes. Serve with shaved chocolate sprinkled on top (optional).
