Honey Bran Granola with Almonds & Apricots.
Set oven to 150ºC (300ºF).
Place oats, bran, spices, honey and coconut oil in a large bowl and mix well. Pour onto a baking tray and spread out evenly. Sprinkle salt over the granola and bake for about 15 minutes in the middle of the oven. Turn the granola with a wooden spoon and bake for another 10 minutes. Turn again and bake for another 10 minutes until medium golden brown all the way through.
Stir whole nuts and sunflower seeds through the granola. Bake another 20 minutes, turning after 10 minutes to toast the nuts and seeds a little bit.
Once the granola is cooked and nicely browned, stir through the roughly chopped apricots and set aside to cool. Store in an airtight container in a cool place.
Note: If you want to make a big batch, just double the recipe and bake the granola in two baking trays either at the same time alternating the trays between the middle and bottom shelf, or one after the other.
