I grew up eating this all the time. It’s delicious and incredibly versatile, and keeps well. It makes quite a bit, but is easily cut in half.
In a large roasting pan, stir together the dry ingredients. In a small bowl or glass measuring cup, mix the oil, honey and vanilla until well combined, then pour over the dry ingredients. Stir together. Bake uncovered at 300 degrees F for 30 minutes, taking the roaster out and stirring every 10 minutes. Allow to cool, then store in an airtight container.
We enjoy this granola topped with milk (of course!), pumpkin seeds, raisins and blueberries, but the possibilities are really endless. Enjoy!
