A fun and simple alternative to the usual hash brown and eggs meal.
If using frozen hash browns, allow bag to thaw or warm up on skillet for 2–3 minutes. Remove and squeeze out any excess moisture (important!). If using regular potato, shred potatoes, then rinse with cold water and pat dry to remove excess moisture.
Add all ingredients in a large bowl and mix.
Heat up skillet to medium heat. Add scoops of the hash brown mixture and form a patty, flattening mixture with a spatula. Cook for 10–12 minutes, flipping every few minutes, ensuring patties are golden brown and crispy.
If desired, serve with a spoonful of sautéed spinach and sunny-side-up egg on top of the hash brown patty.
