This sweet and salty granola is so addictive and makes a great breakfast treat!
Preheat oven to 300ºF. Line a large baking sheet with parchment paper.
In a large bowl, mix together oats, pistachios (or pecans), coconut, pumpkin seeds and salt.
Over low heat, warm sugar, syrup and olive oil in a small saucepan until sugar has just dissolved. Fold liquids into oat mixture, making sure to coat all of the dry ingredients.
Spread granola mixture on baking sheet. Bake until dry and lightly golden, 40–45 minutes, stirring granola a few times during baking. Remove granola from oven, and mix in the dried sour cherries. Allow to cool to room temperature before transferring to a storage container.
