Something as delicious as a breakfast quesadilla does not have to be reserved for the weekend! This quiche is low calorie, high protein, and veggie-packed! Make it ahead of time and use it for a quick skillet or microwave breakfast quesadilla in the morning! The quiche also makes a great breakfast, lunch or quick snack on its own—the possibilities are endless!
Preheat oven to 350ºF.
Whisk eggs, egg whites, zucchini, and garlic powder together in a small bowl. Add to a greased 8×8 baking dish.
Bake for 35–45 minutes until eggs are set, let stand for 5–10 minutes.
For quesadillas, fill tortilla with 1/8 of chopped quiche (1/2 of a serving) and 2 tablespoons shredded cheese. Fold in half and pan fry, turning every 1–2 minutes, until tortilla is crispy and cheese is melted.
