A yummy breakfast casserole!
Preheat your oven to 350. Brown the sausage in a pan.
Cut the zucchini in half lengthwise (This should be a “real” zucchini – not the tiny ones you buy in the store!). Scoop out the seeds, making a large empty cavity in the center.**
In a bowl, beat 6 eggs with a little milk (think scrambled eggs here). Combine with sausage and cheese (as much cheese as you’d like – I like mine really cheesy, for the health conscious, not so much). If your mixture looks too thick, add more eggs, it’ll all work out in the end…
Pour the mixture into the zucchini boats. Try to keep it all in the boats, but if some falls out, c’est la vie.
Bake for 30-45 minutes, until your eggs are set.
*You could also throw in bread chunks to the egg mixture and make it a really hearty casserole.
**If you can’t find a large zucchini (I’m talking LARGE – like the size of your arm), you can thinly slice your small zucchini and layer them in the pan like a lasagna.
