A tasty egg combination.
Place skillet over medium heat.
Break eggs into a bowl. Add your choice of milk (I use non-fat or original unsweetened almond milk) and beat. Note: the milk makes the eggs fluffy.
Stir spinach into the eggs. Add salt and pepper to taste. Mix, making sure yolks are broken and everything is evenly mixed.
Spray cooking spray or put some butter into the pan, lowering heat to low-medium heat.
Zest the peel of orange into the bowl. Cut orange into fourths or eighths and squeeze juice into egg mix, allowing bits of pulp to fall into the mix. Mix one last time.
Put heat onto low and grease skillet with more butter or margarine if desired. Pour egg mixture into skillet. Let it sit and flip or stir for a traditional scramble.
