Description

This is a tasty healthy breakfast option and is very easy to make!

Ingredients

  • ¼ cups Chopped Broccoli
  • ¼ cups Chopped Red Pepper
  • 1  Green Hot Pepper, Stem And Seeds Removed Then Chopped
  • ⅛ cups Chopped Red Onion
  • 1  Egg
  • 1 pinch Salt, Black Pepper, And Cayenne Pepper
  • ½ teaspoons Butter
  • 1-½ teaspoon Olive Oil
  • ¼ cups Spinach
  • ⅛ cups Shredded Cheese (Optional): Cheddar, Mozzarella, Or Pepper Jack

Preparation

1. Gather your vegetables, prep them as detailed in the list above and put them to the side.

2. Crack egg into a bowl and add the cayenne pepper, black pepper and salt.

3. Mix the egg well with a fork and put to the side.

4. In a small saute/omelette pan over medium heat add a teaspoon or less of butter. Let the butter melt then add the broccoli, red pepper, hot pepper and red onion and allow them to sauté for a few minutes, just so they are tender.

5. Once sauteed, remove veggies from pan and set aside with the spinach.

6. In the same pan drizzle a little bit of oil (I used olive oil) and let it warm on medium. Then empty the egg into the pan, tilt the pan so the egg covers the bottom and let it cook until just a bit of egg on the top is left runny.

7. Then flip the egg and start layering your veggies (starting with cheese and spinach) over one side of the circle of egg.

8. By this time your egg should be cooked and you can fold the empty half on top of the veggies half. Cook until cheese is melted and spinach is wilted.

9. Place omelette on a plate, grab a cup of OJ or apple juice (or whatever drink you prefer with your breakfast), and enjoy!
