Description

A one pan breakfast of eggs, potatoes, Ukrainian garlic sausage and vegetables that is perfect for your Father’s Day brunch.

Ingredients

  • ¼ cups Butter, Divided
  • 1 whole Kielbasa (Ukrainian Garlic Sausage) Ring, Sliced Into Bite-sized Rounds
  • 1 whole Medium Sized Onion, Diced
  • 8 whole Button Mushrooms, Sliced
  • 2 cloves Garlic, Minced
  • 1 bag (750 Gram Bag) Frozen Hash Brown Or Home Fries Style Potatoes
  • 1 cup Cooked Corn (or Any Other Leftover Vegetables)
  • 1 Tablespoon Dried Parsley Flakes
  • ½ teaspoons Smoked Paprika
  • Salt And Pepper, to taste
  • 12  Eggs (or 1-2 Per Person, Depending On The Number You Are Serving)

Preparation

Heat a frying pan, that will be large enough to hold all of the potatoes, over medium high heat. Add 1 to 2 tablespoons of butter to the frying pan. (Some kielbasa sausages will have more fat than others, so less butter will be required for frying if your sausage is lean.) Add the sliced kielbasa or garlic sausage slices in a single layer. Cook the meat until it is lightly browned on each side. Remove the kielbasa from the pan and set it aside.

Into the pan, add the remaining butter, diced onion and sliced mushrooms. Saute until the onions are transparent. Add the minced garlic and saute for an additional minute. Stir in the potatoes, corn, parsley, and smoked paprika. Generously sprinkle with salt and pepper. Saute until the potatoes are cooked through and are lightly browned and crispy. You may need to add additional butter to the pan as it gets absorbed by the potatoes. Add the kielbasa back into the pan and stir until heated through.

Remove the potatoes from the frying pan and place onto individual dishes. Use the same frying pan to fry 1 – 2 eggs per person. Place the eggs directly onto the top of each serving of potatoes.
