Just a simple egg dish to get your morning protein. Goes well with peach or Bavarian cream yogurt and/or a side of fresh fruit, as well as toast for carbs.
In a medium-sized bowl, use a fork to combine eggs, coconut milk, pepper, vanilla extract and coconut shavings.
Meanwhile place a skillet over medium heat. Put butter in the skillet and tilt the pan to spread the melted butter over the surface.
Pour egg mixture into the skillet after the butter has melted and scramble eggs as you normally would. Serve and enjoy the sweet coconut taste.
