Description

A classic Russian breakfast, or maybe just one of my family’s star recipes. Sunny side up eggs with bread and veggies. Yum !

Ingredients

  • 1 Tablespoon Sunflower Oil
  • 2 pieces Bread, Sliced Into Matchsticks
  • ½ whole Small Onion, Sliced
  • 5 whole Button Mushrooms, Sliced
  • ½ whole Red Pepper, Thinly Sliced
  • 1 whole Small Tomato, Sliced
  • 5 whole Eggs
  • 2 Tablespoons Parmesan, Grated, (optional)
  • 1 whole Green Onion, Sliced, Optional
  • 1 Tablespoon Fresh Basil, Slivered
  • Salt And Pepper, to taste

Preparation

In a large skillet heat oil over medium heat. Along the pan’s perimeter place bread pieces to go all the way around the edges of the pan. In the middle add sliced onion and cook, stirring occasionally for a few minutes until onions are nice and softened. Add sliced mushrooms and red pepper to the onions and cook for a few minutes until some of the liquid cooks out of them. Add sliced tomatoes in a single layer and cook for a few minutes longer.

Flip the bread pieces over (add more oil to the pan if it’s getting dry). Crack the eggs in the middle of the pan in 4 separate areas. Reduce heat to medium low, and cook until eggs are set. Season with salt and pepper. Sprinkle with Parmesan cheese, green onions and basil (optional). Remove from heat and enjoy!
