Ingredients

  • 9 whole Eggs
  • ½ teaspoons Coarse Salt
  • ½ teaspoons Freshly Ground Pepper
  • ¼ cups Basil, Roughly Chopped
  • ¼ cups Parsley
  • 2 Tablespoons Extra Virgin Olive Oil
  • ½ cups Red Onion, Finely Diced
  • 2 cloves Garlic, Minced
  • ½ cups Red Bell Pepper, Diced
  • 1 cup Baby Bella Mushrooms, Sliced
  • 4 cups Baby Spinach
  • ½ cups Goat Cheese Crumbles
  • ¼ cups Parmesan Shavings, For Garnish

Preparation

In a large bowl, whisk together the eggs, a pinch of salt, pepper, basil and the parsley.

Heat the oil in a medium oven-safe skillet over medium-high. Add the onions and saute 3 minutes. Add the garlic and red bell pepper; saute 3 more minutes. Add the mushrooms and saute 3 more minutes. Add the spinach and heat it long enough for the spinach to wilt. Add a pinch of salt and pepper.

Pour the egg mixture over the sautéed veggies, and turn and tilt the pan until the egg mixture has covered the whole skillet. Add the goat cheese and let eggs cook for a good 4 minutes, then move the skillet to the oven and let it sit under the broiler for a few more minutes, until the eggs are cooked and set.

Let cool 3 minutes, garnish with parmesan, slice and serve!

Very good. I used feta instead of goat cheese, and was thrilled to clean out the fridge with this one.

This was a great summer dinner! Really easy. Didn’t heat the kitchen too much and very tasty. We left out the salt though as our cheese was salty enough for us. Now we’re excited to experiment with different ingredients like fresh tomatoes! Thanks for sharing!
