A quick and healthy breakfast!
1. In a non-stick pan over medium heat, spray some cooking spray. Once pan is hot then add onions. Cook about 2 minutes until slightly brown.
2. Add mushrooms and cook another 2-3 minutes.
3. Add spinach and cook until it’s wilted.
4. Add eggs and stir to scramble and mix with the other ingredients. Add salt and pepper. Remove pan from heat once the egg is cooked to your liking.
