A meal in itself served with applesauce on the side or as an addition to any brunch menu. It is delicious and good for leftovers too! Nice potluck go-to item that disappears in a flash!
Brown sausage, onions and drain. Add next 4 ingredients.
Make batter of Bisquick, milk and mayo in another bowl.
Spread HALF of this batter in a greased with cooking spray 8″ square dish.
Pour in sausage mixture. Spread remaining Bisquick mix on top. (This will be hard to spread so always best to use spatula that has been under hot water to make life easier!)
Bake at 400 degrees for 25-30 minutes. When knife inserted comes out clean, it’s done! (Don’t be fooled by the melting cheese – just make certain the biscuit part is done by this method.)

This was the perfect Sunday breakfast for our house guests this weekend. But they had to hit the road early and it wasn’t done yet. So my husband and I demolished it. It’s good stuff and quite easy to make. I had made PW’s stuffed mushrooms the other day and used the left over stuffing as my ‘sausage’ mix. It was awesome. I served it with a dollop of sour cream.
Next time, I’m going to make this with regular sausage and mix it with some spicy blackberry jam and use that as the filling. I also considered using little breakfast sausages, cut up and granny smith apples in the middle and serve with hot syrup. The possibilities are endless!
Loved how the bisquick mixed up perfectly with milk and mayo! It is messy and you will get your fingers gooey spreading it, but so worth while!
