Great for breakfast or supper.
Make 8 sausage patties and cook until done. Drain.
Cut eight diagonal slices from bread, each about 1-1/2″ thick. Cut a slice in middle of each bread slice not quite to the bottom.
Place a cheese slice and a sausage patty in each pocket, cutting cheese and sausages to fit. Press together.
In a 13 x 9 baking dish, beat eggs, milk, and sugar with a fork until blended. Place filled bread slices in the egg mixture, turning occasionally to coat both sides. Make sure that all the egg mixture is absorbed.
In a 12″ skillet over medium heat, add 1 tablespoon of oil. When oil is hot, add stuffed sandwiches and cook until golden brown on each side, carefully turning once and adding 1 more tablespoon of oil after turning.
Serve with warm maple syrup. Makes 4 main dish servings (2 sandwiches per person).
