Description

Sausage and Red Pepper Quiche: a crustless quiche with bacon, spinach, wild rice, and mozzarella – a recipe from our favorite Bed and Breakfast!

Ingredients

  • 1 cup Cooked Wild Rice
  • 1-½ cup Cooked Crumbled Breakfast Sausage Or Bacon
  • 7 whole Beaten Eggs
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • 1-½ cup Shredded Mozzarella Cheese
  • 1 bunch Fresh Spinach Leaves, Chopped
  • 1 whole Onion, Diced
  • ½ cups Chopped Roasted Red Peppers
  • 1 pinch Salt And Pepper, to taste

Preparation

Mix all ingredients together, pour into your favorite quiche dish and bake at 375F for about 40 minutes.

Let stand for about 10 minutes before serving.

This does sound delicious but I’m with you on leaving out the cream of mushroom soup. I have made many a quiche in my day so my suggestion to preserve the flavor and lose the soup would be to lightly saute sliced mushrooms to remove their moisture then toss them in with a splash (less than a 1/4 cup) of milk. From my experience I think this should give you similar flavor results and a good consistency.

My hubby and I loved this! I used frozen store-bought pie crusts and left out the rice (because I didn’t want to wait for it to cook..or I didn’t have it on hand) and I still had enough stuff to fill both crusts. Good thing, because we devoured it.

This was SO GOOD! I thought the rice sounded like a really good ingredient, but honestly with everything else I couldn’t really tell it was in there, so I might leave it out next time if I’m really counting calories. But either way, this was delicious!!

This was a great change for a breakfast casserole, the rice was a very interesting component. We all loved it. I made the rice the night before so it wouldn’t take long to throw together. Thanks for sharing!
