Description

I like to have breakfast on hand for the morning, because I don’t like to cook that early! Casseroles are great to have in the fridge to slice a piece and quickly warm up. This one is delicious, pretty healthy and looks good on the plate!

Ingredients

  • 4 whole Links Of Breakfast Sausage (use A Couple Extra If They Are Small)
  • 2 cups Chopped Kale
  • 2 cups Tightly Packed Baby Spinach
  • ½ cups Crumbled Feta
  • 6  Eggs
  • ½ teaspoons All Purpose, Or Season Salt Seasoning
  • 1 teaspoon Greek Seasoning
  • Fresh Cracked Black Pepper

Preparation

Preheat oven to 375 F. If using precooked sausage, cut the links into big chunks and set aside. If using fresh sausage brown it in a skillet over medium heat until cooked through. Remove from the skillet and cut into chunks.

In the same pan saute the kale and spinach until wilted.

In a greased 8×8 (or similar size in a different shape) baking dish spread the cooked greens evenly on the bottom. Top with sausage chunks and sprinkle with feta.

Crack the eggs into a medium sized bowl and lightly beat them. Mix the seasonings into the whipped eggs. Pour over the sausage and gently jiggle the pan to make sure all of the eggs get incorporated in.

Bake at 375 F for 30-35 minutes or until eggs are set. Mine took 33 minutes. Hope you enjoy!

Wow, this was so good! I used some beef kielbasa since that’s what I had on hand, and I added a bit of pepper jack and cheddar cheeses and cut back a bit on the feta since my hubby doesn’t care for that, and this was wonderful. Even my teenagers ate it. Definitely a keeper!
