Description

Cheesy egg goodness wrapped up in a soft tortilla! Perfect for a lazy morning!

Ingredients

  • 4 whole Eggs
  • 1 pinch Kosher Salt And Pepper To Taste
  • 1 pinch Red Pepper Flakes, to taste
  • 1 Tablespoon Whole Milk
  • 1 Tablespoon Butter
  • ⅓ cups Green Bell Pepper, Diced Small
  • ⅓ cups Roma Tomato, Diced Small And Seeds Removed
  • ½ cups Breakfast Sausage Links, Roughly Chopped
  • ½ cups Colby Jack Cheese, Freshly Grated
  • 4 whole Flour Tortilla Shells

Preparation

Whisk together the eggs, salt, pepper, red pepper flakes and milk and set aside.

Heat the butter in a medium sized pan over medium heat. Add green pepper and cook until slightly soft, toss in the tomato and cook for a minute. Next add the sausage and cook until browned and heated through. Pour in the eggs and reduce heat to medium low. Push the eggs around the pan until they are light and fluffy and cooked through.

Meanwhile heat the tortillas in the microwave (with a moist paper towl on top) until hot, about 30-45 seconds. When the eggs are cooked turn off the heat and add the cheese and toss until the cheese begins to melt. Place desired amount of filling onto a hot tortilla, fold and repeat. Eat three then take a nap. Enjoy!!!

This recipe makes approximately 4 burritos, depending on how much of the scrambled egg mixture you add.
