Description

Doesn’t your mother always come up with the best recipes?! I know, mine does too! Well, my mother’s take on frittata just happens to be one of those things that proved to me, once again, that “mom knows best!”

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • ¾ cups Cherry Tomatoes, Diced
  • ½ cups Onion, Chopped
  • ¾ cups Broccoli, Chopped
  • 3 whole Egg Whites
  • ½ cups Cooked Rice
  • 1 whole Large Egg, Beaten
  • ½ cups Skim Milk
  • 1 Tablespoon Cumin
  • Salt And Pepper, to taste
  • ½ cups Cheese

Preparation

1. Preheat your oven to 350 degrees F.
2. In a skillet, over medium heat, heat the olive oil and add your vegetables.
3. In a separate bowl, combine the egg whites, rice/quinoa, egg, milk, cumin, and salt and pepper.
4. Add egg mixture to vegetables. Once the edges of the eggs have set, add the cheese, remove from the stove top and place into the oven.
5. Bake in the oven for approximately 5 to 7 minutes.
6. Serve, eat, and enjoy!

This was good! I used almond milk and soy cheese because I cant have dairy and cooked it a little longer and it was yummy and got compliments from my friends!I wasn’t exactly sure what to do with the cherry tomatoes so I sliced them and baked them on top and it was very pretty.
