No question about it. My favorite donut is chocolate cake with a glaze. I could eat a dozen … all in one sitting. For Christmas one of the things I wanted was a mini donut pan. I figured this would be a way that I could make a version of my favorite donut in a smaller baked variety. That means that I can eat at least 2 (or 3) per serving right?
Preheat oven to 400 F.
In a large bowl mix together the butter, egg and sugar until creamed. Add the baking powder, salt and dark cocoa. Beat until mixed and smooth. Add the milk and flour. Beat well.
Spoon the batter into a greased (coat with cooking spray first) donut pan. Recipe makes roughly 18 donuts.
Bake at 400 F for 15 to 20 minutes. Don’t over bake. Remove pan from oven and set on a wire rack to allow donuts to cool before glazing them.
Combine powdered sugar and milk in a medium sized bowl and mix to combine. Drizzle glaze over cooled donuts.
