A healthy vegetable frittata made as mild or as spicy as you like! An easy and fast breakfast, lunch or dinner.
In a small frying pan, heat oil over medium heat. Add carrots and saute until they start to soften. Mix in the salsa.
In a separate bowl, whisk eggs, milk, salt and pepper. Pour over the carrots/salsa. Top with grated cheese.
Turn heat to low, cover, and let the eggs cook through (about 5-10 minutes).
Cut into wedges and serve, topped with extra salsa!
*I don’t use onions or garlic in this recipe because the salsa I use already has enough. But if you like onion-ey/garlic-ey flavor, give it a shot! Just add to your frying pan before adding the carrots.
*Homemade salsa is best, especially if it has cilantro!
