Description

If you like savory eggs in the morning, for lunch or (as we sometimes have it on a lazy night) for dinner; you will love this. It’s great for large families as you are able to up the amount of ingredients as necessary and it accommodates for the most crowded table when served with warm, crusty bread.
Enjoy!

Ingredients

  • 1 teaspoon Olive Oil, Extra Virgin, For The Pan
  • 1 whole Medium Onion, Chopped (optional)
  • 1 whole Large Or 2 Medium Tomatoes, Chopped
  • 1 whole Sweet Green Pepper(s) Or Chili Pepper(s), Chopped
  • 4 whole Eggs (1 Per Person)
  • 2 slices Feta Cheese, Crumbled
  • 1 dash Black Pepper

Preparation

1) Take a low skillet or shallow frying pan and warm it gently over medium heat.
2) Add your olive oil and begin to heat it.
3 (If you are using the onion, this is the time to add it; it goes in first for a soft saute – cook until it is translucent).
3) Add your chopped tomatoes and saute them gently. When they are soft . . .
4) Add your chopped pepper (or chilies, if you like a little kick) and saute until they are soft.
5) Break in your egg(s) and use a fork to break up and mix the egg(s) into the mixture. This should be a swirling action.
6) Once your eggs are cooked slightly (never overcook this) take it off the heat and add your crumbled feta cheese. Mix it in.
7) Add cracked black pepper but not salt as the cheese is already salty.

Dig in with some crusty bread!

Menemen is one of our favorite breakfast dishes. Alternatively I like to cook my eggs whole in the menemen instead of scrambled, so the eggs end up over easy. My mother in-law prefers hers with feta cheese instead of eggs on top. The great thing about menemen is that you can adjust it anyway you like.
