Low-Carb Eggs In A Nest. Perfect for any meal!
1. Melt half the butter or oil over medium heat in a skillet. Add slices of bell pepper and lightly cook on both sides.
2. Distribute the other half of the butter between two holes of the bell peppers and allow to melt.
3. Crack an egg into the center of each bell pepper. Allow to cook about halfway to your liking, then cover skillet with a lid. Cook eggs to desired doneness.
4. Season with salt and pepper to taste.
5. For added taste, top with salsa or guacamole.
