I came up with this by combining and adapting two or three other recipes using what I had on hand. And it can be adapted so many different ways by changing the meats, the cheeses, adding vegetables, etc. Be creative and use what you have. Every variation I have made has been great! And it’s so easy to make, too.
Preheat oven to 375.
Mix eggs, cottage cheese, chiles, grated cheese, ham, onion, butter and hot sauce in large bowl.
In a small bowl, mix flour, baking powder, and pepper. Stir into egg mixture.
Pour into greased deep dish 9 inch pie pan. Sprinkle or grate Parmesan over the top.
Bake about 35-37 minutes or until set and knife inserted in center comes out clean. (Loosely lay a piece of foil over the top if it’s browning too much toward the end.)
Let stand 10 minutes before cutting. Serve with additional Frank’s Red Hot Sauce.
*Notes: I have used all different kinds of cheeses…a mix of sharp and mild cheddar is good, or Mexican blend,or colby/jack, etc. Last night I made it w/Swiss cheese, ham, and green pepper. Yum! I’ve only made it w/ham but I think it would be good w/sausage or bacon, too.
