A savory update to the classic eggs on toast recipe that is simple and packed full of flavor.
Place slices of bread in the toaster and toast to your liking.
Coat a cast iron skillet with olive oil and place over medium heat. While the skillet is heating, take bread out of toaster and gently rub the garlic clove over one side of each slice.
When skillet finishes heating, crack eggs into the skillet, keeping each one separate, and allow the egg whites to become firm, about one minute. Be careful not to over cook. Flip eggs over and allow the other side to cook for about a minute or until done to your liking. Remove fried eggs from the pan and place them onto a separate plate.
Turn the heat up to high, adding more olive oil if necessary. Place tomato slices onto skillet, allowing each side to blacken. Once both sides of the tomato halves are blackened, remove from pan and place them on top of the garlic toast. Add fried eggs to the top of the tomatoes. Sprinkle with salt and pepper. Enjoy!
