Eggs with cheese and scallions all from local farmers!
Chop scallions. Heat the oil in a pan and saute the scallions. Once they are soft and have a little color, add eggs that have been beaten in a separate bowl and stir as you would for scrambling. When they are almost cooked through but still a little runny, add the cheese to the pan and mix well. The eggs will stay soft from the cheese so don’t overcook. Serve with your favorite local fruit, if possible!
