Description

This makes a great lunch as well!

Ingredients

  • 1 whole Onion
  • 1 whole Bell Pepper
  • ½ pounds Breakfast Sausage
  • 2 whole Potatoes
  • 6 whole Eggs
  • 3 slices American Cheese
  • 1 Tablespoon Olive Oil

Preparation

Chop the onion and green pepper. In a small skillet, brown the breakfast sausage. Cut up the potatoes into small cubes. In a large skillet, add the potatoes and enough water to cover; bring to a boil, reduce heat and simmer. Cook just until they are tender, but not cooked through. Drain.

Add oil to a large skillet and heat. Add the drained potatoes, onions and peppers; season with salt and pepper. Cook and stir until the vegetables start to brown nicely. Add the cooked, chopped breakfast sausage.

In a bowl, beat the eggs. Add to the sausage mixture, cooking while pulling back the sides to let the egg mixture cook thoroughly on the bottom.

Turn broiler on in the oven. When egg mixture is getting brown on bottom, put it under the broiler to finish the top. Before the top browns, add cheese and cook to melt.

Oh…the things you can add to this is only limited to what you have on hand. We put alot of different things into it.

If you don’t have a broiler, I think finishing it off in the oven would work too….putting this in the oven makes the egg puff up more.

I make something similar to this. I don’t precook the potatoes. I just add them to a frying pan with a little olive oil, and cover the pan. I turn the heat to high for a few minutes. Then stir them, add the veggies, and turn the heat down. I also usually add garlic minced, or sliced. Then put it all together, the sausage, potato mixture, and eggs, in one pan, sprinkle cheese over the top. And let the cheese melt. Mostly because I don’t have a broiler!
