Delicious breakfast sandwich made “special” by some roasted garlic.
Prepare bread by spreading 3 cloves of the roasted garlic over the slices. If desired you could spread a teaspoon of butter or margarine on each slice first. Add two tomato slices each and season with a pinch of salt and pepper. Top each with a teaspoon of the chopped basil followed by a slice of provolone. Place under the broiler and set timer for 5 minutes. Beat the eggs together with the cream and a pinch of salt and pepper. Heat pan to medium, coat with cooking spray and scramble eggs on medium heat until done.
When the cheese is melted and the eggs are done, divide the eggs evenly over each open-faced sandwich and serve.

I wanted to add….sunny-side up eggs and a variety of cheeses are also yummy. And I’ve done this on whole wheat muffins too, kind of like a walk on the light side for Eggs Benedict.
