A simple, delicious breakfast to make for the next brunch!
Preheat oven to 350 F.
Into a greased 8×8 pan lay chopped potatoes and scallions on bottom.
In a mixing bowl whisk together eggs and almond milk until fully combined, then mix in cheese. Pour mixture on top of potatoes and scallions.
Bake for 45-55 minutes or until the center is set.
